Manual harvest

Vallière is a plot that gives distinctive bunches of small grapes (millerandage or hen and chickens), resulting in a wine with silky tannins.

Selective sorting of the harvested grapes before vatting on a sorting table, followed by whole bunch vinification with temperature control. We stick to 10 day vatting.

The bunches are kept whole throughout vinification, the pneumatic pressing, drawing off part of the juice to give greater concentration. Maturing is in cement vats before bottling in the following April or May, depending on the vintage.
